Every time you walk into a pub for a steak you generally know the drill when it comes to the sauces on offer. Mushroom and pepper sauces are a given, then you might get a red wine jus, a bearnaise, or even a chimichurri or salsa verde.

But you don’t always have time to create a classic condiment at home, so here’s four super-fast sauce recipes that will pack maximum flavour and punch in the shortest amount of time possible.

Quick chimichurri

Time: 5 minutes

Grab a food processor or stick blender and toss in a clove of garlic, a small red chilli and a bunch of parsley and coriander. Add a few tablespoons of red wine vinegar then blend. Add in a few good glugs of olive oil and blend again. Sorted.

Speedy salsa verde

Time: 5 minutes

Hack up some mint, parsley and chives and throw into a bowl with a teaspoon of capers, a couple of chopped anchovies, the juice of a lemon and a few good glugs of olive oil. Throw in some crushed garlic, a bit of salt and pepper to season and mix well. Done.

Fast red wine jus

Time: 15 minutes

Throw a cup of beef stock into a saucepan and reduce by half over a high heat. Add half a cup of red wine, a splash of balsamic vinegar and a teaspoon of brown sugar, and reduce by half again. Done and delicious.

Super fast peppercorn sauce

Time: 10 minutes

Bring a few good glugs of red wine vinegar to simmer in a non-stick frying pan. Add half a cup of beef stock and reduce by half. Add the desired amount of green peppercorns, and crush a few if you want a bit of extra zing. Add some salt and pepper, and finish with 60ml of cream and let thicken slightly. Boom.
