Ingredients

  • 2 tbsp extra virgin olive oil
  • ½ red onion, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 tsp smoked paprika
  • 1 tbsp ground cumin
  • 1 tsp chilli flakes (optional)
  • 6 rashers beef bacon, roughly chopped
  • 400g tin pulped tomatoes
  • 330g jar fire-roasted peppers, sliced
  • 2 tbsp tomato paste
  • Salt and freshly cracked black pepper
  • 4 large free-range eggs
  • ½ bunch coriander, leaves picked
  • ½ cup feta cheese, crumbled
  • Sourdough or pita, to serve

Method

  1. Preheat oven to 180°C (fan forced).
  2. Heat olive oil in a large cast iron pan over medium heat.
  3. Add onion, garlic, spices and Streaky Beef Rashers. Cook until softened, aromatic and lightly browned (2-3 minutes).
  4. Stir in tomatoes, fire-roasted peppers and tomato paste. Bring to a simmer and season well.
  5. Remove from heat and create small wells in the sauce using a spoon.
  6. Crack eggs into the wells and transfer to the oven. Bake until eggs are cooked to your liking.
  7. Garnish with coriander and feta, then serve with sourdough or pita.
