Caesar Salad with Streaky Beef Rashers

Ingredients
- 1 cup diced Diamantina streaky beef rashers
- 1 cup good quality mayonnaise
- 3 anchovy fillets (optional)
- ½ cup finely grated parmesan
- 2 heads baby cos lettuce, roughly chopped
- 2 eggs, hard boiled and peeled
- 2 slices sourdough bread, cut into cubes
Method
- Cook beef bacon in a non-stick pan over high heat until crispy and browned. Remove with a slotted spoon and set aside, reserving the fat in the pan.
- Add sourdough cubes to the pan and toast until golden and crisp. Set aside to drain.
- In a large bowl, crush anchovy fillets (if using) into a paste.
- Add mayonnaise and parmesan, mixing until well combined.
- Add lettuce and toss gently to coat in the dressing.
- Transfer to a serving plate and top with crispy beef bacon and croutons.
- Grate hard-boiled eggs over the salad and serve immediately.
