Pumpkin Galette with Streaky Beef Rashers

Ingredients

  • 1 cup pumpkin, diced
  • 1 sheet shortcrust pastry
  • ½ cup tomato chutney
  • ¼ zucchini, thinly sliced
  • ½ red onion, thinly sliced
  • 4 rashers Streaky Beef Rashers, roughly chopped
  • 4 slices mozzarella cheese
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and freshly cracked black pepper

Method

  • Preheat oven to 180°C (fan forced).
  • Line a baking tray and lightly roast diced pumpkin for 5 minutes to soften.
  • On a separate lined tray, place the shortcrust pastry.
  • Spread tomato chutney over the pastry, leaving a 4cm border around the edges.
  • Arrange pumpkin, zucchini, red onion and streaky beef rashers over the base.
  • Fold the edges inward to form a rustic galette shape and season with salt and pepper.
  • Top with mozzarella and bake for 20-25 minutes, or until golden and bubbling.
  • Drizzle with olive oil and balsamic vinegar before serving.
