Pumpkin Galette with Streaky Beef Rashers

Ingredients
- 1 cup pumpkin, diced
- 1 sheet shortcrust pastry
- ½ cup tomato chutney
- ¼ zucchini, thinly sliced
- ½ red onion, thinly sliced
- 4 rashers Streaky Beef Rashers, roughly chopped
- 4 slices mozzarella cheese
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and freshly cracked black pepper
Method
- Preheat oven to 180°C (fan forced).
- Line a baking tray and lightly roast diced pumpkin for 5 minutes to soften.
- On a separate lined tray, place the shortcrust pastry.
- Spread tomato chutney over the pastry, leaving a 4cm border around the edges.
- Arrange pumpkin, zucchini, red onion and streaky beef rashers over the base.
- Fold the edges inward to form a rustic galette shape and season with salt and pepper.
- Top with mozzarella and bake for 20-25 minutes, or until golden and bubbling.
- Drizzle with olive oil and balsamic vinegar before serving.
