An old-school favourite that’s as quick and easy as it is tasty, curried sausages are a surefire family favourite. Perfect for a no-fuss midweek meal.
- 6 beef sausages
- 1 tbsp olive oil
- 1 chopped onion
- 1 cup frozen peas
- 1 carrot, halved lengthways, thinly sliced
- 2 cups (500ml) beef stock
- 1 tbsp plain flour
- 1 tsp curry powder
Heat oil in a large saucepan over medium-high heat.
Cook sausages, turning occasionally, until browned all over. Remove and drain on absorbent kitchen paper. Slice into thick pieces diagonally.
Add your onion and carrots to the same saucepan, cooking for about five minutes or until onion is translucent and carrot is light golden.
Add curry powder and stir for 30 seconds.
Add flour and mix for 30 seconds.
While mixing, pour in beef stock.
Add sausages and peas, bring to simmer and cook for 1 to 2 minutes or until heated through. Serve with steamed rice, mashed potato, pasta or noodles.
